"The Clos de Coulaine is Claude Papin's (Château Pierre Bise) other property in Savennieres. Papin is one of the few winemakers in the Coteaux du Layon to believe sincerely that chaptalization should be banned for vins moelleux. How does he obtain these sweet wines without adding sugar? He does it by reducing his yields to 25-30 hectolitres per hectare in more generous years, and by keeping them down to as low as 15 in less favorable vintages. His chenin-blanc based whites are hand-harvested and hand-pressed, vinified in stainless steel and blended and bottled unfiltered. What do you get when you allow the unique terroir (volcanic schist with a light limestone clay topsoil) of Savennieres speak for itself? An explosion of peach and melon aromas with tropical fruit flavors and a finish of minerals and citrus so powerful it's difficult to believe you're not actually standing there in the vineyard!"
