"The Cave de l'Etoile is the oldest co-operative in Banyuls, dating back to 1921, and specailizes in a more traditonal "old style" Banyuls. They maintain not only the large traditional casks, but also have a collection of glass bonbonnes on a terrace outside where they are exposed to extreme Mediteranean climate. The 1988 is a vintage Banyuls produced with predominantly grenache noir, and spends over three years in barrel. Never had older Banyuls before? Well here's you chance! Dried cherry, fig and cocoa waft from the glass, followed by a subtle element of roasted walnuts and mocha and tobacco. This is a wonderful way to end a great meal. Enjoy with your favorite chocolate dessert, or better yet, pair with some roasted nuts, dried cherries and a slice of aged goat cheese like Vallee d'Aspe."
