" This is Neil Ellis' sincere tribute to Sancerre, and we think, quite honestly, he hit the nail on the head. It starts out steely, showing flinty minerals and plenty of nervy acidity, but then the fruit hits you-gooseberry and lime skin, with herbaceous undertones and a touch of something more tropical and round. Guava? Aged on the lees for three months for added complexity. Oysters, please!"
