"A wine we let go too long. It is definitely mature, and has gone through several phases since we opened it up. At first it was tight, with almost no finish, then it started to round out and taste like a really nice aged wine. However, it has recently started to give off hints of a wine over the edge, that has started to go. We may have caught this one not a moment too soon."
