"From the highly acclaimed 2002 vintage, we are proud to share with you our first Reserve Cabernet! Comprised of 15 barrels of exclusively mountain grown fruit, Tim has assembled a fantastically rich and balanced 100% Cabernet that typifies our fruit-forward and approachable style. Passion for the process and attention to detail are the keys to crafting wines such as this. Tim’s approach is old-world but he has modern tools to assist him. Gentle handling of fruit and wine is crucial in terms of tannin management. Grapes are hand-harvested and once at the winery, sorted at a rate of 2-3 tons per hour. Each lot is then de-stemmed, but not crushed to allow whole berry fermentation. After 72 hours of cold maceration, a slow and cool fermentation follows with manual punch-downs conducted three times daily. Tim’s approach results in a rich and approachable wine style that has found a growing following. Our latest Cabernet offering is dark, firm and plush. This wine opens with aromas of black licorice, plum and mint. As it unfolds in the mouth, cherry, blackberry and mocha are revealed with a slight hint of vanilla scented oak. Firm but supple, the tannins help guide the black pepper finish. Drink now through 2012.
