"Louis Jadot controls nearly 150 acres of superb vineyards throughout the Cote d’Or and the company policy of buying grapes at the price of finished wine ensures that the winery always gets them the best quality grapes available. What makes Chablis special are the soils: chalky and mineral-rich, most of them were created by the fossil shells of a small oyster, which is ironic because Chablis is a classic choice with any kind of seafood. You can really taste Chablis’ famous soils in this well-balanced, minerally wine, which offers fresh, vibrant golden apple and Meyer lemon fruit and a steely backbone. Chablis is one of the longest-lived of dry white wines; you can cellar it for years, but I like to drink it young to appreciate its taut, crisp, minerally freshness. "
